1 tablespoon (15ml) Olive Oil
1 cup (~50g) diced Onion
3 Garlic cloves, minced
4 cups (1 liter) Chicken Broth, plus more as needed
1 (28-oz) can crushed San Marzano Tomatoes
2 teaspoons Peri Peri Rub (adjust to taste)
3 tablespoons Long-Grain White Rice
1/2 cup (120ml) Heavy Cream
1 teaspoon Sugar (adjust to taste)
1 teaspoon Kosher Salt (adjust to taste)
For Serving: (optional)
1 handful Basil Leaves for garnish

COOKING INSTRUCTIONS
- Sweat the onions: In a large soup pot, heat the olive oil over medium heat. Add the diced onions and sauté for about 5 minutes until they become translucent and start to soften.
- Add the minced garlic and Peri Peri, continue to sauté for an additional 1-2 minutes until fragrant. Be careful not to brown the garlic.
- Pour in the broth, canned tomatoes with their juice, and white rice. Stir well to combine. (The rice will help thicken the bisque as it cooks.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 30-35 minutes or until the rice is fully cooked and soft.
- Blend the Soup: Using an immersion blender or a regular blender, carefully blend the soup until it is smooth and creamy. (If using a regular blender, allow the soup to cool slightly before blending. Blend in batches as needed and then return the blended soup to the pot.)
- Stir in the heavy cream to give the bisque its creamy richness.
- Taste the soup and adjust the seasoning as needed. Add more Peri Peri, sugar, or salt to taste, keeping in mind that the sugar will help balance the acidity of the tomatoes.
- Allow the bisque to simmer on low heat for an additional 10 minutes to meld the flavors. If it's too thick, you can add more chicken broth to reach your desired consistency.
- Ladle the tomato bisque into bowls. If desired, garnish each serving with fresh basil leaves for a burst of freshness and color.
