Sweet & Spicy Herbed Popcorn

Popcorn is such a simple and fun snack item that can be seasoned with unlimited flavors. This delicious bowl of Sweet and Spicy Herbed Popcorn is seasoned with Serengeti Heat for a little kick and savory notes, sweetened with maple syrup, turmeric for color, and salt to enhance the flavors. Serengeti Heat is Blackbird's signature grilling and roasting green chili dry rub that has the right balance of heat from jalapeños, aromatic and earthy flavors from dried herbs and spices. Serves 2

INGREDIENTS

For Popping Popcorn:
2 tablespoons Coconut Oil
½ cup (100g) Popcorn Kernels

Popcorn Seasonings:
1 tablespoon Maple Syrup, or to taste
1 teaspoon Serengeti Heat Dry Rub, or to taste
½ teaspoon Pure Kosher Salt, or to taste
¼ teaspoon Ground Turmeric (optional)

PREPARATION METHOD
  1. Add the oil and the popcorn kernels in a large pot that has a well fitted lid.
  2. Cover the pot and place it over a medium-high heat. Give the pot a shake so the kernels are all coated in the oil as the pot is heating.
  3. Keep shaking to pot periodically as the kernels begin to pop. It's a bit tricky to know when all the kernels are finished popping, but when the popping noises stops for a few seconds, have a look.
  4. Tip the popcorn into a large bowl and drizzle with the maple syrup. Then sprinkle with Serengeti Heat, salt, and turmeric. Give the bowl a good shake/toss until the seasonings are evenly distributed.
  5. Taste and adjust the seasonings to your liking.
  6. Serve immediately.
