Creamy Rice Pudding

This Rice Pudding recipe has a unique and flavorful twist on traditional rice pudding. It combines the comforting elements of rice pudding with the warm, earthy, and slightly spicy flavors of Kenyan Pilau Masala. The delightful fusion of creamy, sweet, and spiced flavors is familiar and pleasantly exotic, making it a unique treat. Feel free to adjust the sweetness to personal preference, and incorporate additional ingredients like dried fruits, or nuts for added richness and texture. Serves 4-6

 

INGREDIENTS


For Cooking Rice:
1 cup (195g) Jasmine Rice, or any  short-grain rice
2 cups (500ml) Filtered Water

For Simmering Stage:
1 can (400ml, 14oz) Coconut Milk
6 tablespoons Granulated Sugar, or adjust to taste
½ tablespoon Kenyan Pilau Masala, or to taste
¼ teaspoon Fine Himalayan Pink Salt

For Additional Flavor:
1 teaspoon (5ml) Vanilla Extract

Toppings:
Toasted coconut flakes, chopped nuts, or fresh fruits for garnish. (optional)

 

 

COOKING INSTRUCTIONS

  1. Add rice and water into a medium-sized saucepan. Bring it to a boil over medium-high heat.
  2. Once boiling, reduce the heat to low and cover the saucepan with a lid. (Reduce heat to the lowest setting possible for slow absorption.)
  3. Set a timer for 15 minutes. No Peeking!
  4. Add the coconut milk, sugar, Pilau Masala, and salt to the saucepan. Stir well to combine and allow it to simmer for 10-15 minutes (without a lid) until the rice is tender and creamy. Keep simmering until the desired consistency is achieved and adjust the sweetness according to your preference by adding more sugar if desired.
  5. Remove the saucepan from the heat and stir in the vanilla extract.
  6. Allow the rice pudding to cool slightly before serving. It will thicken further as it cools.
  7. Serve the rice pudding warm or chilled, topped with your choice of garnish such as toasted coconut flakes, chopped nuts, or fresh fruits.

NOTES:

  • Vanilla extract flavor preservation: Vanilla extract is highly aromatic and delicate. By adding it at the end of the cooking process, you ensure that its fragrance and flavor remain intact. If vanilla extract is cooked for too long, its flavor may diminish or become less pronounced.
  • Adding dried fruits or nuts: We recommend adding a handful of dried fruits and nuts during the simmering stage of cooking. This way, the fruits will maintain their texture and add bursts of sweetness and chewiness to the rice pudding.
