Xawaash Roasted Carrots

INGREDIENTS

Root Vegetables:
1  pound (454g) Carrots

Seasonings + Cooking Oil:
2  tablespoons Olive Oil
1  teaspoon Somali Xawaash
½ teaspoon Pure Kosher Salt, or to taste

 

 

PREPARATION METHOD

  1. Position oven rack in the middle of the for better air is circulating and preheat oven to 400°F. 
  2. Add all the seasonings and oil into a large size mixing bowl, stir and set aside.
  3. Wash, trim, and cut the carrots into whatever shape you like. The important thing is that they are roughly equal in size so they cook at the same time. Place in the mixing bowl with the seasonings and toss/mix thoroughly to coat.
  4. Line a half-sheet pan, which is about 18"x13" with parchment paper or silpat (silicone baking mat) for easy cleanup.
  5. Spread the carrots on the baking sheet in an even layer not touching each other. The more room the carrots have the better they will roast.
  6. Place in the oven and set a timer for 15 minutes.
  7. Check the carrots and rotate the sheet pan (turn it 180°).
  8. Continue to roast until the carrots are caramelized and a knife pierces with a little bit of resistance. This may take an additional 5-10 minutes depending on your oven and the size/shape of the carrots.
